chicken tenders--- banana bread

I copied this and posted because some were having a hard time finding it:
Here is the banana bread recipe I use. For Aruba and those that asked about it the other day. It can be made either with or without the nuts if you desire. This is very easy and quick to make, but is also delicious. I always freeze my bananas first and then thaw when I am going to make it. They thaw out in under 30 minutes, but they are very easy to mash then, they practicaly come out as mushwhen you peel them. Good luck!
6 bananas, very ripe
1 tsp lemon juice
3 1/4 cups flour
1 1/4 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
2 cups sugar
2 large eggs
1/2 cup vegetable oil
3/4 cup chopped toasted pecans (some like walnuts)
Heat oven to 350
prepare two 8" loaf pans, coat with butter
Puree bananas and lemon juice together in mixer or blender. Should have about 2 cups
sift the dry ingredients (except sugar) together, set aside
combine the puree, sugar, eggs, and oil and mix on medium speed intil blended
add in the sifted dry ingredients and mix until just combined. Mix in the nuts if using now.
Divide the batter evenly between the loaf pans and tap on the counter to pop air bubbles. Bake until the bread springs back when pressed or a tooth pick comes out clean. My oven takes 48 minutes. Some ovens may take as much as 55-60
cool the loafs in the pans for a few minutes then remove from pans and cool on racks. Once completely cool, wrap with plastic wrap or enjoy.
