banana nut bread jam!!
Published Oct. 9, 2008I just got done with my second batch! Boy is it good. I never would have thought of it on my own as making Bananas into jam. I have two more batches to go and on to pear chutney.Do any of you have a recipe for a sugar free or reduced sugar apple pie filling? I really like canning after I got over my initial fear of it. Next week I will be doing for the first time pressure canning. I have a bunch of potatoes and some veggie soup to put up. Have a great day!

10 ripe bananas pureed 1 tbs lemon juice 1 cup sugar 1 cup splenda grauals1/2 cup brown sugar 1.5 cups minced pecans or walnuts 1 box of pink less sugar sure jell 1 tsp cinnamon 1/2 tsp nutmeg Mix bananas,pecans,lemon juice and sure jell pectin into a large kettle.Stir while bringing to a a full rolling boil.All at once add the sugars. Stirring continuously,heat until a full rolling boil.Continue for one minute.Fill jars to a 1/4 inch head space,wipe rim,tighten down with band and process in boiling water bath for ten minutes. I put mine on a towel in a cool room. If you want you can double the white sugar to 4 cps and use regular pectin.This is very sweet and full of flavor.Hope you enjoy!
